A dish of fresh zucchini noodles topped with a rich marinara sauce and fresh basil leaves.
Ingredients
- 2 medium zucchini
- 1 tbsp olive oil
- 2 cloves garlic, chopped
- 1 can (400g) crushed tomatoes
- 1/2 tsp of dried oregano
- Salt and freshly ground black pepper to taste
- A few fresh basil leaves for garnish
Preparation steps
- Wash the zucchini and transform them into noodles using a spiralizer or julienne peeler. Set aside.
- In a frying pan, heat the olive oil over medium heat. Add the chopped garlic and sauté for 1 minute until fragrant.
- Add the crushed tomatoes and dried oregano. Bring to a boil, then reduce heat and simmer for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
- Season the marinara sauce with salt and pepper to taste.
- Add the zucchini noodles to the pan with the sauce. Stir gently and cook for 2-3 minutes, just enough to warm and soften slightly (they should still be crunchy).
- Serve immediately, garnished with fresh basil leaves.
Chef’s tip
For a more intense flavor, you can add a pinch of red pepper flakes to the marinara sauce. If you don't have a spiralizer, you can use a peeler to make wide ribbons of zucchini.
