Ingredients

  • 1 gluten-free pizza dough (ready to use)
  • 1/2 cup organic tomato sauce
  • 1 medium zucchini, cut into thin rounds
  • 1/2 red onion, cut into thin strips
  • 1 cup cherry tomatoes, cut into two
  • 1/2 cup of grated vegan cheese (mozzarella type)
  • A few fresh basil leaves
  • 1 tbsp of olive oil
  • Salt and freshly ground black pepper to taste

Preparation steps

  1. Preheat the oven to 200°C (400°F).
  2. On a baking sheet lined with parchment paper, spread the zucchini slices and red onion slices. Drizzle with olive oil, salt and pepper. Grill in the oven for 10-12 minutes, until lightly tender and golden.
  3. Meanwhile, spread the tomato sauce over the pizza dough.
  4. Spread the grilled vegetables and cherry tomatoes over the sauce. Sprinkle with vegan cheese.
  5. Bake the pizza for 15-20 minutes, or until the crust is golden and the cheese is melted and slightly bubbling.
  6. Remove from the oven, garnish with fresh basil leaves and serve immediately.
Chef’s tip

For an even crispier crust, pre-cook the pizza dough alone for 5-7 minutes before adding the sauce and toppings. You can vary the vegetables depending on the season: peppers, mushrooms, spinach...
