A bowl of chocolate and hazelnut truffles dusted with cocoa, with whole hazelnuts and cinnamon sticks on the side.
Ingredients
- 1 cup toasted hazelnuts (skinless)
- 1/2 cup pitted Medjool dates (about 8-10 dates)
- 1/4 cup unsweetened cocoa powder (plus extra for coating)
- 2 tbsp maple or agave syrup
- 1 tsp of vanilla extract
- Pinch of salt
Preparation steps
- In a food processor, blend the toasted hazelnuts until you obtain a fine powder. Continue to blend until they start to form a paste (this may take a few minutes).
- Add the pitted dates, cocoa powder, maple syrup, vanilla extract and pinch of salt. Blend until mixture is well combined and forms a sticky dough.
- Take small portions of mixture and roll between palms to form bite-sized balls.
- Roll each truffle in additional cocoa powder to coat evenly.
- Place truffles on a plate and refrigerate for at least 15-20 minutes to harden before serving.
Chef’s tip
For a more intense flavor, you can lightly roast the hazelnuts before using them. For a twist, try coating the truffles with shredded coconut, crushed pistachios, or icing sugar.
