Ingredients

  • 4 slices of thick sandwich bread (vegan and certified gluten-free)
  • 1/2 cup of plant-based milk (almond, certified gluten-free oat or soy)
  • 2 tbsp of chickpea flour (or other gluten-free flour)
  • 1 tbsp maple syrup (or other liquid sweetener)
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. ground cinnamon
  • A pinch of salt
  • 1 tbsp coconut oil or vegan margarine for cooking
  • Fresh berries (strawberries, blueberries, raspberries) for garnish
  • Additional maple syrup for serving

Preparation steps

  1. In a shallow dish, whisk together the plant-based milk, chickpea flour, maple syrup, vanilla extract, cinnamon and salt until smooth and evenly combined.
  2. Heat the coconut oil or vegan margarine in a large non-stick pan over medium heat.
  3. Dip each slice of bread into the liquid mixture, making sure it is well coated on both sides. Do not soak for too long to prevent the bread from disintegrating.
  4. Place the coated bread slices in the hot pan and cook for 3-4 minutes on each side, or until golden and crisp.
  5. Serve immediately with fresh berries and a drizzle of additional maple syrup.
Chef’s tip

For an even tastier French toast, use slightly stale bread. You can also add a pinch of nutmeg or cardamom to the dough to vary the flavors.
