Ingredients

  • 1 cup round rice (like risotto rice or dessert rice)
  • 400 ml coconut milk (one can)
  • 2 cups plant-based milk (almond, certified gluten-free oat, etc.)
  • 1/4 cup coconut sugar (or other sweetener)
  • 1 vanilla pod, split and scraped (or 1 teaspoon vanilla extract)
  • Pinch of salt
  • Coconut shavings for garnish (optional)

Preparation steps

  1. Rinse the rice in cold water until the water runs clear. Drain.
  2. In a heavy-bottomed saucepan, combine the rinsed rice, coconut milk, plant-based milk, coconut sugar, vanilla seeds and pod (if using), and pinch of salt.
  3. Bring to a boil over medium heat, then reduce heat to low. Cover and simmer for 30-40 minutes, stirring occasionally to prevent the rice from sticking to the bottom, until the rice is tender and the liquid is absorbed and creamy.
  4. Remove the vanilla pod (if using). If the rice pudding is too thick, add a little more plant-based milk to achieve the desired consistency.
  5. Serve hot or cold, garnished with coconut shavings if desired.
Chef’s tip

For an even richer rice pudding, you can use thick coconut cream. Feel free to adjust the amount of sugar according to your preferences. A touch of ground cardamom can also add an interesting flavor.
