Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, chopped
  • 500g broccoli, cut into florets
  • 2 medium potatoes, peeled and diced
  • 750 ml vegetable stock
  • 100 ml cream vegetable
  • Salt and freshly ground black pepper to taste
  • Cooked broccoli florets for garnish (optional)

Preparation steps

  1. In a large saucepan, heat the olive oil over medium heat. Add onion and garlic, sauté until translucent, about 5 minutes.
  2. Add broccoli florets and diced potatoes. Cook for 5 minutes, stirring occasionally.
  3. Incorporate the vegetable stock. Bring to the boil, then reduce the heat, cover and simmer for 15-20 minutes, or until the vegetables are very tender.
  4. Remove the pan from the heat. Using an immersion blender (or transferring the soup in batches to a blender), blend the soup until smooth and creamy.
  5. Return the soup to a low heat. Stir in the plant-based cream and reheat gently without boiling.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with cooked broccoli florets if desired.
