A bowl of creamy green soup, garnished with fresh mint leaves and a swirl of plant-based cream.
Ingredients
- 1 tbsp of olive oil
- 1 medium onion, chopped
- 2 cloves of garlic, chopped
- 600g peas (fresh or frozen)
- 750 ml vegetable stock
- 50g fresh mint leaves
- 100 ml plant-based cream (soy, certified gluten-free oats or rice)
- Salt and freshly ground black pepper to taste
Preparation steps
- In a large saucepan, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
- Add the chopped garlic and cook for 1 minute until fragrant.
- Stir in the peas and vegetable stock. Bring to the boil, then reduce the heat and simmer for 5-7 minutes, or until the peas are tender.
- Remove the pan from the heat. Add the fresh mint leaves.
- Using an immersion blender (or transferring the soup in batches to a blender), blend the soup until smooth and creamy.
- Return the soup to a low heat. Stir in the plant-based cream and reheat gently without boiling.
- Season with salt and pepper to taste.
- Serve hot, garnished with a few fresh mint leaves or a drizzle of plant-based cream if desired.
Chef’s tip
For an extra touch of acidity and freshness, add a squeeze of lime juice just before serving. You can also garnish with toasted croutons.
