Ingredients

  • For the black bean steaks:
  • 1 can (400g) black beans, rinsed and drained
  • 1/2 red onion, finely chopped
  • 2 garlic cloves, chopped
  • 1/2 cup gluten-free bread crumbs
  • 2 tbsp all-purpose flour (or gluten-free)
  • 1 tbsp. ground cumin
  • 1/2 tsp. of smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 tbsp olive oil
  • For assembly:
  • 2 gluten-free burger buns
  • 1 avocado, sliced
  • 1 tomato, sliced
  • A few lettuce leaves
  • Slices of red onion
  • Vegan mayonnaise (optional)

Preparation steps

  1. In a large bowl, roughly mash the black beans using a fork or potato masher. Leave a few pieces for texture.
  2. Add chopped red onion, garlic, breadcrumbs, flour, cumin, smoked paprika, salt and pepper to the crushed black beans. Mix well until you obtain a homogeneous dough.
  3. Divide the dough in two and form two burger steaks.
  4. In a frying pan, heat the olive oil over medium heat. Cook the black bean steaks for 5-7 minutes on each side, until browned and crispy.
  5. Meanwhile, lightly toast the burger buns if desired.
  6. Assemble the burgers: Spread vegan mayonnaise on the buns (if using), then add the lettuce, black bean steak, tomato slices, avocado and red onion.
  7. Serve immediately with sweet potato fries or salad.
Chef’s tip

For a firmer steak, you can add a tablespoon of ground flax seeds mixed with three tablespoons of water (let stand for 5 minutes) to the dough. This acts as an additional binder.
